All Around Holiday Lifesaver

Bringing our family together during the holidays is a top priority. There’s nothing better than seeing their faces light up during a meal! It just makes all the preparation worth it. As we juggle all the festivities from gift-giving to planning our menus over Christmas to the New Year, we’ll need our ingredients in the fridge to work double time for us. Classic Macaroni Salad


Noche Buena is never complete without macaroni salad. It’s the classic Christmas dish that both kids and grown-ups always come back to every year.

Ingredients

  • 700 ml Lady's Choice Mayonnaise
  • 1 tbsp vinegar
  • 1 lb elbow macaroni pasta, cooked
  • 4 hard-boiled eggs, chopped
  • ⅓ cup carrots, chopped and cooked
  • ½ cup raisins
  • 2 tbsp sugar
  • Salt and pepper to taste
  • ½ cup diced queso de bola (optional)

Directions:

  1. In a large pot, fill with lightly salted water and cook the macaroni according to package directions. Drain the macaroni and set aside.
  2. In a large bowl, mix the Lady’s Choice Mayonnaise, vinegar, sugar, salt, and pepper. Stir the dressing until well incorporated.
  3. Add in the macaroni, chopped carrots, eggs, and raisins.
  4. Sprinkle it with queso de bola on top, and chill until ready to serve.

 

Chicken Kiev

 

This chicken kiev features a twist. Stuffed with tart mayonnaise and cheese, it’s rich and oh-so-fun to eat!

Ingredients:

Stuffing

  • 1 cup of Lady's Choice Mayonnaise
  • 1/2 cup mozzarella cheese
  • 100g butter
  • 2 tbsp crushed black pepper
  • Salt to taste
  • 4 chicken breasts
  • 50g flour
  • 2 eggs, whisked
  • 125ml flour
  • 2 cups panko bread crumbs
  • 100ml cooking oil

Directions:

  1. Prepare your stuffing. Mix the Lady's Choice Mayonnaise, mozzarella cheese, butter, salt, and pepper. Roll into a long sausage and cover with cling wrap. Chill the stuffing in the refrigerator for at least 1 hour until firm.
  2. Take your chicken breasts and create a slit in the middle to make a pocket for the stuffing.
  3. Dip the chicken breasts into the flour, then the eggs, then the bread crumbs. Repeat for 1 more round. Set aside on a tray.
  4. Remove the stuffing from the fridge and cut evenly into 4 pieces. Stuff each chicken breast with the stuffing. Place the kievs into the refrigerator for at least an hour.
  5. Preheat your oven to 180° C.
  6. Fry the kievs for 2-3 minutes on each side until the breading is golden. Transfer to a baking tray and bake for 20 minutes until fully cooked.

Baked Cheesy Salmon

No need to order in! This baked salmon looks fancy, but it’s actually so easy to put together.

Ingredients:

  • 2 pcs of salmon fillet (250g each)
  • 1 white onion, sliced
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • 1/3  cup of Lady's Choice Mayonnaise
  • 2 tbsp lemon juice
  • 1/4 cup quick-melt cheese, shredded

Directions:

  1. Preheat the oven to 200°C.
  2. Mix the garlic, onion, lemon juice, salt, and pepper in a bowl.
  3. Place the salmon fillets skin-side down on a baking sheet topped with aluminum foil. Spread the lemon juice mixture over the salmon.
  4. Spread a layer of mayonnaise on top of salmon fillets and top with quick-melt cheese.
  5. Bake the salmon in the oven for 15 – 20 minutes. Remove from the oven and serve.

Sushi Bake

We’ve all been through the sushi bake craze. Make it yourself over the holidays, or better yet – get the kids to help out in assembling it!

Ingredients:

  • 1 cup of Lady's Choice Mayonnaise
  • 4 cups of Japanese rice, cooked
  • 2 tbsp rice vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups kani, shredded
  • 2 ripe mangoes, diced
  • 1 cucumber, cut into strips
  • 1/2 cup quick-melt cheese, shredded
  • 2 packs of seaweed sheets

 Directions:

  1. Preheat the oven to 375˚°F (190°˚C).
  2. In a medium-sized bowl, mix the rice vinegar, sugar, and salt until dissolved. Add the rice to the bowl and coat evenly with the vinegar mixture. Spoon into an oven-safe baking tray and create a flat layer.
  3. In another bowl, mix the Lady's Choice Mayonnaise, kani, cucumber, and mango. Spoon a layer of this mixture over the rice. Top with quick-melt cheese.
  4. Place the tray into the oven and bake for 10 minutes. Remove from the oven and allow it to cool.
  5. To eat, spoon the sushi bake onto the seaweed sheets and eat it like a sushi roll.

Moist Chocolate Cake

Seriously, this works! Mayonnaise is the secret ingredient that makes this chocolate cake moist, and it’s such a quick dessert to whip up.

Ingredients:

  • 1 cup of Lady's Choice Mayonnaise
  • 2 cups all-purpose flour
  • 3 tbsp unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • Vanilla ice cream (optional)

Directions:

  1. Preheat the oven to 350˚F (175˚C).
  2. In a large bowl, mix the Lady's Choice Mayonnaise with water and vanilla extract until smooth and blended.
  3. In another large bowl, mix the flour, sugar, cocoa, and baking soda. Slowly fold in the mayonnaise mixture, mixing gradually.
  4. Line a 9x9 inch baking pan and pour the mixture in. Place the pan into the oven and bake for 30 minutes. Remove the cake from the pan and place on serving plate to cool.
  5. To enjoy, slice and top with vanilla ice cream.
